Ingredients
- 2 lbs or 6 boneless, thick cut, pork chops
- 1 1/2 cups almond meal
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp chipotle chili pepper
- 1/2 tsp cayenne pepper
- Salt & pepper to taste.
- 2 cage free/ farm fresh eggs
- 1 cup coconut oil
Directions
Mix all the dry ingredients in a small mixing bowl.
Heat a medium skillet with the one half of the cup of coconut oil. Dip the pork chop in to the whisked egg, then in coat it in the almond meal mixture.
Place in the sizzling, heated skillet. 3-4 minutes per side. Transfer to a plate and repeat until all 6 are cooked.
Sweet & Savory Bliss
I like to place my pork chops on top of sautéed Apples and Bacon. Slice the bacon in to inch size pieces & place in skillet on medium. Sauté for about 8 minutes. Add 2 chopped apples and sauté for another 10 minutes. Be careful not to over sauté as the apples become too soft.
Keep It Simple Side
A side Kale salad gives it a nice finishing touch! Dressing for Kale Salad: 2 tsp olive oil. 1 tsp balsamic vinegar Squeeze 1/2 of a fresh lemon Salt & pepper to taste.
